Cheese triangles à la Poppy
Ingredients:
1 8-oz package cream cheese, softened
1/2 cup*** feta cheese, crumbled
salt
cracked pepper
1 stick butter
phyllo dough (usually in the dairy or frozen foods case)
Preheat oven to 400 degreees F. Stir feta and cream cheese in a bowl until combined. Add salt and pepper to taste; set aside. Cut phyllo dough sheet into thirds length-wise. Take the first third and brush with butter. Place the second third on top of the first and brush with butter. Take the last third and place on top of second third and brush with butter. Slice in half width-wise so that you have two squares. Use a spoon to scoop out one teaspoon of filling, place directly onto center of square. Fold square diagonally to form a triangle, then press down gently to smooth out filling. Butter top of triangle then place on buttered cookie sheet. Continue until all filling is gone. Continue until all filling is gone. Bake triangles at 400 degrees F for 10 minutes, or until phyllo dough is golden brown. Serve hot or room temperature.
Yields: approximately 15 triangles
Cheese cups à la Poppy
Ingredients:
1 8-oz package cream cheese, softened
1/2 cup*** tomato-basil feta cheese, crumbled
1 stick butter
1 package (qty 15) of phyllo dough cups (not in the dairy case at my store, just on promo shelves)
Preheat oven to 400 degreees F. Stir feta and cream cheese in a bowl until combined; set aside. Place cups on greased cookie sheet and brush inner cup with butter. Use a spoon to scoop out enough filling to fill the cup, approximately 1 teaspoon. Continue until all filling is gone. Bake cups at 400 degrees F for 8-10 minutes or until the cheese becomes set. Serve hot or room temperature.
Yields: approximately 15 cups
Everyone loved the tomato-basil cups, they just had so much flavor. I really enjoyed these. Hope you do, too!
***Par accident, I originally posted 1/2 pound of feta to 1 package cream cheese, but I actually meant 1/2 cup (1/4 lb). Désolée!!
